Extremely
popular in Japan, Castella cake is rather unusual. It's always square
or rectangular, never round, because traditionally it's made in a
bottomless wood frame. The crust, both top and bottom, is perfectly
flat, unwrinkled, thick and well-browned. The cake is made with bread
flour but it's soft and practically "poreless". How do you get all these
characteristics without cheating by adding oil or a man-made
emulsifier? And without a wood frame? Just follow my recipe.

Ingredients:
150 g egg whites, ¼ tsp cream of tartar, 75 g castor sugar, 75 g egg
yolks, 45 g egg whites, 40 g hot-pressed coconut oil, 70 g canned/boxed
pineapple juice, 55 g cake flour, ¼ tsp salt
主料為150g蛋清,¼塔塔茶匙霜中,加入75g白砂糖中,加入75g蛋黃,45克蛋清40克熱榨椰子油中混合70g罐裝/盒裝鳳梨汁55克低筋麵粉,¼茶匙 鹽
If you want to bake a
very fluffy cake but you don't have a chiffon pan, go for Ogura cake.
Despite its name, Ogura cake isn't Japanese. It hails from Batu Pahat,
which is in Johor, which is in Malaysia. My favourite flavour for the
cake is coconut but orange is pretty good too. I also like coffee,
pandan, lemon, rose, almond . . . . Oh dear, so many cakes, so little
time. Gotta to eat harder! *stuff face with more cake*
